Many years ago I ran a mobile cocktail bartending business. We catered for hundreds of events over the years..

This is baby-faced me at one of my earliest events over ten years ago!

The number one most requested cocktail for each menu was the mojito. Hands down. Literally almost every event we were making them en masse.

I wish I used this nifty "hack" to simplify my life. It would have saved ridiculous amounts of time.

It's surprisingly simply. No fancy equipment. No advanced techniques required.

But, there is one important step to ensure that it won't oxidise and turn a hideous colour.

In fact, my mint syrup is now a week old and it still as bright and flavourful as when it was first made.
